The Perfect Autumn Bellini Recipe

Cooler temperatures and additional clothing layers have never stopped me from enjoying a chilled glass of champers. However, it does make me crave a slightly “warmer” version with spices such as cardamom and allspice found in this Autumn Bellini recipe.




The Perfect Autumn Bellini Recipe
  1. 4 ripe pears, cored and quartered
  2. 1 cup sugar
  3. 2 cups water, split
  4. 1/2 teaspoon ground cardamon
  5. ground allspice, for garnish
  1. In a medium sized pan over medium high heat, combine pears, water and sugar. Simmer to cook and soften pears, about 30 minutes. Remove from heat.
  2. Carefully pour pear mixture into a food processor and pulse until smooth. Add cardamon and combine. Allow pear puree to cool.
  3. Pour champagne into a chilled flute, 1/2 way, slowly add approximately two teaspoons to the champagne {this may cause the mixture to foam, wipe glass edges and continue}. Top with a sprinkle of allspice and serve very cold.
