Me? I’m trying to hang on to every bit of summertime. I just love everything about this season- morning coffee on the porch, neighborhood bbq’s with fresh corn, dips in the lake and sandy toes from the day at the beach.⚓️

So while I appreciate every season and will get on board when autumn arrives, right now I am happily savoring summer.☀️

I have to admit, the first time I heard about a spiked Agua Fresca I was watching Shahs of Sunset on BRAVO, yes it’s true. #bravoholic

Reza had just arrived at MJ’s house and she greeted him with an Agua Fresca spiked with Tequilla. If you are a fan of the show you can image it was most likely heavy spiked however, it looked refreshing, super pretty and sounded exactly like something I would love to offer my guests this summer when they stop by.

My version has watermelon + basil and is just as tasty as it is pretty.

Grilled summer corn… Is there anything better? 🌽

Well a farm fresh tomato might compete… 🍅

But that’s a story for another day.

In the farm world of yester-year there is a saying “knee-high by Fourth of July”. It means all is well with your corn crop and the growth is on schedule. Well these days you can get fresh corn as early as Memorial Day – or year round in some parts – but the I still believe the sweetest corn is late season corn grown in New Jersey {sorry… it’s the Jersey girl in me that I just can’t shake!}. 😍

Late season Jersey corn hardly needs butter, just a touch of salt and pepper and it is perfect! This weekend we are making regular grilled corn as well as Mexican Street Corn. 🌽

Yesterday after a client interior design consult I grabbed an ice coffee and took a stroll down to the small marina in town to check out the boats. {luckily I was in my nautical outfit and fit right in!}⚓️

It took me back to my summers growing up in CT… The sounds of the lines hitting the mast in the wind. The waves splashing against the edges of the dock. The smell of the salt air.🚤

I wish I could have stayed the rest of the afternoon but real life was calling … 💕

Anyone else missing the weekend like I am today?😃

Over the last few weeks we have been lucky enough to travel to see friends in some of our favorite spots and find new ones to visit again. Most of our time has been spent outdoors which is my favorite place to be in the warm summer months. I just can get enough of the green of the gardens, blue of the pools, lushness of wooded trails and the feel of pure white sand of the beach!👙

Each has its own special value and I am truly grateful to be able to experience America in all her beauty!🇺🇸

This particular garden bench was spotted at Hortulus Farm in Bucks County on an Art in the Garden tour. If you are in the area be sure to stop into their nursery shop and tour the amazing property. I do it at least once a year and find something new each time.🌳

My family has a running joke about how much I love cheese… I see no joke about it! I LOVE CHEESE! And I don’t try to hide it one bit, so when I heard June was National Dairy Month I knew this was my opportunity to finally put my passion into action!

I have several books on how to make cheese at home that to be honest, are currently being used more for decor on my coffee table than in the kitchen for their cheese recipes.  All of that is about to change. I am going to learn how to make homemade mozzarella cheese {with more varieties of cheese to follow}!

Like every great dish, in order to get the best end result you must begin with the best basic ingredients, in the case of homemade cheese, milk is the star of the ingredient list so selecting fresh quality Florida Dairy Farmers milk at the market is a must. Fortunately we have a local farm in town so I headed over and lucky me, 10 day old “Honey” was just beginning to see visitors and I got to love on this special little brown miracle.

The remaining ingredients read more like a science experiment than pantry items. Liquid vegetable rennet, citric acid and non-chlorinated water. Sounds scary to me however, from what I have read making cheese really is more of a scientific formula but not scary at all. I think the scariest part is going to be that I will now have the power to create my favorite food right in my kitchen!

Unlike my usual recipe posts I have included the images within the recipe for how to make mozzarella – my reasoning being this is a slightly more difficult process than most recipes make it seem. Worth it, but more complex than simply following a recipe. There are details that can only be explained using visuals.

So let’s begin…

How to Make Homemade Mozzarella

Makes about 1 pound of mozzarella

Adapted from Artisan Cheese Making at Home by Mary Karlin

What You Need

Ingredients

1 1/4 cup bottled water, non-chlorinated
1 1/2 teaspoon citric acid
1/4 rennet tablet or 1/4 teaspoon liquid vegetable rennet
1 gallon milk, whole or 2%, not ultra-pasteurized, not homogenized
1 teaspoon kosher salt, plus more for brine

Equipment

5 quart or larger non-reactive pot
Measuring cups and spoons
Digital read thermometer
Non-reactive knife, off-set spatula, or similar
Slotted spoon
Rubber spatula
Non-reactive whisk
Cheese cloth
Rubber Gloves

Instructions

1. In a non-reactive stock pot heat milk to 88 degrees over a slow heat over the course of 15-20 minutes. 

2. Measure out 1/4 cup of water in a separate bowl. Stir in the citric acid until dissolved.

3. Measure out 1 cup of water in a separate bowl. Stir in the rennet until dissolved.

4. Pour the milk into the pot. Stir in the citric acid solution. Set the pot over medium-high heat and warm to 90°F, stirring gently.

5. Remove the pot from heat and gently stir in the rennet solution. Stir for 1 minute. Stop stirring, cover the pot, and let it sit for 15 minutes.

6. After 15 minutes, the milk should have set, and it should look and feel like soft silken tofu – although under the whey. If it is still liquidy, re-cover the pot and let it sit for another five minutes. Using your knife, cut the curds into 1 inch cubes and let sit for another 10 minutes.

7. Place the pot back on the stove over medium heat and warm the curds to 105°F over 15 minutes. Stir slowly as the curds warm, but try not to break them up too much. The curds will eventually clump together and separate more completely from the yellow whey.

8. Remove the pan from the heat and continue stirring gently for another 10 minutes.

9. The curds should now feel springy and stretchable, if not leave the curds for 10 minutes then test again.

10. Line a colander with cheese cloth and scoop curds into it with a slotted spoon. Let drain for 15 minutes, reserve the whey.

11. Add 1 1/2 teaspoons of salt to the whey and stir. Slowly heat over 30 minutes to 175 degrees.

12. In the meantime, wrap curds in cheese cloth, place on cutting board, flatten out and allow to dry out for 20 minutes. After 20 minutes, open cloth and cut into 1/2 inch strips.

13. Once the whey is up to temperature, place sliced curds on slotted spoon and dip into mixture to melt curds. Using gloves, begin to knead or pull the curds several times until shinny and stretchable, repeat dipping and melting as needed. Form curds into balls and place into a bowl of ice water to chill.

14. The mozzarella can be used immediately or kept refrigerated for a week. To refrigerate, place the mozzarella in a small container filled with whey brine. Cover and refrigerate.

Please note, this recipe was adapted in my kitchen, with my tools, in my given environment, I want you to know that each of my three attempts turned out three slightly different textures of cheese. It seems cheese making is a true science {and art} and minor factors greatly impact the outcome. Be kind to yourself and try, try again if your first batch isn’t worthy of appearing on the cover of  Bon Appetite.

Did you know that for generations, Florida’s more than 130 dairy-farming families have remained true to their values & committed to producing a fresh supply of wholesome, quality milk. These hardworking men & women are caretakers of their cows, stewards of the land, & leaders in their communities. The state’s more than 130 dairy farms are primarily owned and operated by second and third-generation farmers.

And just as interesting, there are about 123,000 dairy cows in Florida, each dairy cow produces about 6-8 gallons of milk each day and is milked 2-3 times per day that collectively produces about 2.34 billion pounds of milk a year. 

Don’t live in Florida? I am sure your state has a just as interesting group of farmers, take this month to research organizations or individual farms in your area.

Grilled Georgia Peaches with Buratta + Prosciutto

Here’s the scene. A balmy August summer night, deep summer in the south. The Mr. has a dinner meeting for out of town business associates and isn’t due home for another few hours. On the way home I stop and pick up the last copy of The New York Times Wednesday edition. I usually get the Thursday edition but they recently stopped the Home section, such a shame – I have tried to analyze what this means about the home and shelter category, or their readership, or their advertisers, but haven’t come up with a good theory. If you know please leave a comment below so I can move on.  But I digress..

Turns out, to my delight, that Wednesday is the Food edition! Apparently while I was obsessing about the loss of the Home section I forgot about the all important Wednesday New York Times Food Section! Again, I try to figure out a good theory behind this miss – but not long at all, as I am quickly swept up in the apparent fate that has brought us back together on this summer evening on the back patio.

I had already planned on heating up the grill {my little buddy the Big Green Egg} when I found a few luscious peaches at the market. Perfectly ripe and ready at the end of the Georgia Peach season so I figured I would give the whole Grilled Peaches thing a try, and while I am at it, you really can’t go wrong with buratta and prosciutto… well can you? I say no man, you can not. So I grab them as well.

Turns out grilling the peaches is super easy and brings out a warm richness in the fruit.. Simply cut them in quarters and place on a very hot grill. The temperature is the key to the grill marks, flames aren’t ideal but red coals are a must. If the coals, or grate, are not hot enough they simply toast all over, and although the flavor is similar the presentation is lacking. Bottom line :: heat up the grill.

Once the Grilled Peaches are the grill place them on a platter with the burrata, prosciutto and honey if you wish. Crusty bread is a nice addition but not needed at all. Also, honey can be served with this dish but select a honey with a subtle flavor as I find it can over power the bite if it has a raw deep flavor profile. 

Spoon the burrata onto the grilled peach slice and top with a generous portion of prosciutto – this is no place for dainty bites, you want to experience the sweet warm fleshy peach, the cool creamy burrata and the salty prosciutto all at once. Serve with extra napkins if others are around, but luckily for me I was all alone on my patio. I did end up getting a few drops on my paper… complete worth it and I am pretty sure the NYT food editor would approve.

In the farm world of yester-year there is a saying “knee-high by Fourth of July”. It means all is well with your corn crop and the growth is on schedule. Well these days you can get fresh corn as early as Memorial Day – or year round in some parts – but the I still believe the sweetest corn is late season corn grown in New Jersey {sorry… it’s the Jersey girl in me that I just can’t shake!}. Late season Jersey corn hardly needs butter, just a touch of salt and pepper and it is perfect!

Early season corn, however, frequently needs a little more dressing up to bring out the flavor and an easy grilled Mexican corn recipe does the trick for me. Also known as Mexican street corn, or Elotes, is a basic traditional recipe using mayonnaise, sour cream, queso fresco or cotija, chili powder, fresh lime and of course a charcoal grill.

You know I always like to add a special touch to the look of the table and for this Mexican corn recipe I stripped back the husks, removed the silk and tied them back with bakers twine. The effect is super chic and it also creates a natural handle for serving and eating the corn. If you or your guests prefer they can easily snap off the top once the corn is grilled.

This subtle twist on the original grilled Mexican corn recipe offers the tangy bite of blue cheese and thyme – and the benefit of using ingredients easily found in most stores around the country. The thyme came straight from the herb garden at my mother’s house so it included extra love – but you can use traditional thyme as well, or really any herb growing in your garden this season.

This recipe is great for summer entertaining because you par-cook the ears before placing them on the grill which will save cooking time when your guests are arriving as well as space on the grill for the other items on your menu. Be sure your grill is hot before placing the ears on, you are mainly using it for grill marks and the smokey charcoal flavor, a low heat may cook the corn more than you wish – you may also adjust the boiling portion if your prefer to cook them completely on the grill.

Summer is just 94 days short but with these quick and easy decorating ideas for your entranceway  you will be loving your homes curb appeal all summer long.

Start the season with a fresh coat of paint to really make your front door pop! Add a new door knocker {even if you only use the doorbell they add a great design touch}, seasonal door mat, a potted plant and in one quick afternoon you are ready to welcome guests the entire summer entertaining season!

Inside the doorway place a collection of baskets or totes to keep clutter to a minimum. My bright yellow Hunter boots welcome me home everyday and it makes me smile just to see them – I promise rain boots will change your perception of a rainy summer day for ever, picking up a pair is totally worth it.

#1 :: Have a Signature Cocktail. 

Having a go-to drink makes entertaining easy. You are sure to always have everything on hand if you simply restock when ingredients get low after a party, guests love trying new cocktails and really, who doesn’t love saying “It’s my signature cocktail”! A few of my favorites… The Paloma Cocktail, The Cilantro Margarita or a Fresh Squeezed Lime + Grapefruit Cocktail.

To me fresh strawberries and whipped cream sitting on top of shortcake screams Americana and summer more than the pie in question. This easy strawberry shortcake with homemade whipped cream will have you whistling God Bless America {or perhaps..Summertime by DJ Jazzy Jeff } in no time!

No matter if it is Memorial Day, Fourth of July. Labor Day or a neighborhood BBQ this quick dessert looks fresh and festive placed on a tall white cake plate decorated with a few red paper fans as a finishing touch – kids and adults will think you baked for days!

Strawberry season in the US actually starts in late February when the fields in Plant City, FL produce their first batch in time for the Annual Strawberry Festival held each year in Plant City – in fact the town produces most of the strawberries available in the US during the early part of the season. If you happen to be in the area be sure to stop in my favorite local market, Parkesdale Market for one of their famous shakes!

This easy recipe saves time by using pre-made shortcake or vanilla cake bases. True, original shortcake offers a different texture and a homemade quality but if you are short on time your local market will most likely offer a version you can quickly pick up. BUT, do not compromise on the whipped cream. Fresh homemade whipped cream is incredibly easy to make with a noticeable difference in taste this is where I choose to spend my extra time in the kitchen.

EASY STRAWBERRY SHORTCAKE WITH HOMEMADE WHIPPED CREAM

INGREDIENTS

2 pints fresh strawberries, washed, stems removed, cut into segments lengthwise
8 vanilla cake shells
1 pint whipping cream
1 tablespoon 10x confectioners sugar
4-5 strawberries, halved with greens intact

 

METHOD

Place strawberries in a bowl with 1 tablespoon of sugar and stir to combine. Let sit while preparing the homemade whipped cream.

For Fresh Whipped Cream

In a medium bowl whip heavy cream with a wire whisk until liquid has a heavy creamy consistency and begins to reach stiff peaks. Approximately 10-15 minutes – time varies on whipping speed and amount of breaks – you can do this! Shift in confectioners sugar and whisk to ensure completely combined. Do not over whip mixture as it will stiffen and take on a buttery quality.

To Completed Easy Strawberry Shortcake with Homemade Whipped Cream Dessert

Place sweetened strawberries onto vanilla cake bases to fill each just slightly over flowing. Add a tablespoon of fresh whipped cream and top each on with a strawberry half. Serve chilled. Store unused whipped cream in the refrigerator in an airtight container.

Serves 8 with additional strawberries.

Homemade Organic Lavender Honey {#SundaySupper}

Perfect to make and keep on hand to add to hot tea or to add a wonderful natural sweetness to your favorite cocktail, this Lavender Honey is also the perfect gift from the kitchen to bring as a hostess or “welcome to the neighborhood” gift.

Organic Lavender Honey

INGREDIENTS

  • 1/4 cup lavender flowers, organic or culinary
  • 2 cups local organic honey

METHOD

In a small pan, heat honey on low heat until it is thin and slides off a metal spoon easily.

Add lavender flowers to honey and stir to combine. Heat on low for an additional 5 minutes, stirring occasionally.

Remove from heat and allow to cool slightly.

Using a fine strainer or cheese cloth, pour the honey through to remove lavender flowers, into an airtight container to store until ready to use.

USES
Mix Lavender Honey into hot water for a mid morning beverage, in hot tea before bed and let the aroma relax you, add a tablespoon into your favorite cocktail recipe to add a touch of natural sweetness with an herbal essence or spread some over butter onto warm toast.

FOR GIFT GIVING
Fill your favorite glass vessel with the Lavender Honey, add a few flowers on top, seal with an air tight lid – I suggest using Weck Jars due to their high quality and style but any airtight jar with work well.

Be sure vessel is free of any residue by wiping down the outside.

Tie a ribbon around the neck of the jar adding a gift tag with a recipe option on the back. .
