Fresh Fennel Citrus Salad

This Fennel Citrus Salad combines three of my favorite flavors into one dish- fennel, red onions and radishes –  it is a favorite of mine to pair with grilled tuna on a summer night, or heaped on top of a bed of arugula for a refreshing lunch.

I’m not sure when I first fell in love with fennel, or red onions, but radishes are a completely different story. I clearly remember eating radishes as a young kid when my mom prepped them for salads. I would grab a whole one and savor the crisp cool peppery-ness of those little red beauties.

 

FENNEL CITRUS SALAD

INGREDIENTS:

1 fennel bulb
6-7 radishes, sliced
1/2 red onion, sliced
1 large red grapefruit
2 tablespoons olive oil
1 tablespoon honey
1/2 teaspoon kosher salt
1/2 feaspoon fresh round pepper

METHOD

Remove tall leafy greens from the top of fennel bulb and save for later. Slice Fennel in quarters, remove the dense center, then slice in thin {1/4 inch} slices. Place in a large salad bowl. Add sliced radishes and red onion and mix together.

In a smaller separate bowl place olive oil, honey, salt, pepper and the juice of half the grapefruit. Combine ingredients until the honey is thoroughly mixed in.

Slice the remaining grapefruit half and slice into small sections, chill until ready to serve.

Remove small pieces of the green fennel tops and chop to bite size pieces, 1/4 cup to 1/2 cup. Chill until ready to serve.

In the large bowl, pour dressing mixture and combine. Chill.

Prior to serving add grapefruit sections and fennel greens to the other salad ingredients and combine.

Serve and enjoy!

A quick fresh salad made for Sunday Dinner. Fresh mixed greens and Portobello mushrooms
with a home made dressing of:

SUNDAY SALAD

INGREDIENTS

• olive oil
• walnut oil
• shallots
• Thyme
• fresh lemon juice
• apple vinegar
• local honey

This with a side of basic pizza. P-e-r-f-e-c-t dinner with the family. Sometimes simple and fresh is best .
