Cheese Please. A Day Filled #CookingWithCabot

Last week I was invited to one of my favorite spots in Tampa, The Epicurean Hotel, to taste, learn and cook with the tasty cheeses of Cabot Creamery. I joined a group of friends, local bloggers and Sunday Supper Founder, Isabel Reis Laessig for a day sure to be filled with cheesy deliciousness.

The morning began with breakfast bar complete with yogurt and fresh fruit provided by Florida Milk. It was loaded with toppings like granola, shredded coconut and a selection of Divine Chocolate – It was before 10 am but it’s it always time for Dark Chocolate with Pink Himalayan Salt or maybe you prefer Dark Chocolate and Mint! Either way everyone wins!

After a few cups of coffee and chatting with fellow attendees we had a front row seat as Chef Jimmy went live on Facebook to create a tasty bite, BBQ Teriyaki Vegetable and Cheddar Rolls, they are a fun twist on traditional Japanese Negimaki and perfect for your next cocktail party!

Back at the stove Chef Jimmy works with Lodge Cast Iron selection of cookware and whips up an another creamy cheese recipe. I LOVE great cookware that looks great too and had no idea Lodge made a line of enamel pots – did you know??

Next course, and a complete must have for a snowy weekend, was Tomato Basil Mac and Cheese created by Chef Jimmy Kennedy and served by the smiling Sunday Supper Founder, Isabel Reis Laessig.

After two amazing demos we moved to lunch at Elevage with the group to share a family style meal complete with THE most incredible tomato soup with mini grilled cheese. Heaven!

To complete the day – a cheese board creation “contest”. With so many tasty options I would say we were all winners!

Filet Mignon with Creamy Leek and Green Peppercorn Sauce + Kansas City Steak #GIVEAWAY

This filet mignon is king — butter-tender, cut from the center of the finest aged tenderloin and hand selected from premium corn-fed Kansas beef.

Filet Mignon with Creamy Leek and Green Peppercorn Sauce

INGREDIENTS

2 tablespoons unsalted butter
2 tablespoons fresh green peppercorns {packed in brine}
2 leeks, thinly sliced, well washed
2 tablespoons bourbon / whiskey
1/2 cup heavy {whipping} cream
Salt, as needed
METHOD

After cooking your filet, remove from pan to rest.
Add 1 1/2 cups of water to pan and using a flat spatula, scrap bits from bottom of pan and bring to a simmer. Add green pepper corns and leeks. Simmer for 5 minutes to soften leeks.

Add bourbon, simmer for 5 minutes, stirring occasionally.

Remove pan from heat and slowly add in heavy cream, stirring continuously. Place back on heat and simmer for 5 – 10 minutes until cream sauce begins to thicken. Taste. Add salt as needed.

Entertaining Tip:: Make this sauce ahead of time. Prepare a batch and refrigerated in an airtight container a day in advance. To reheat, transfer to a small saucepan and cook over low heat, stirring frequently.

Mary’s Maine Bars l #OXOGoodCookies

Cooler days have me craving warm beverages, the cozy flavors of cinnamon, nutmeg + spice and getting back into the kitchen. But you know any time I am in the kitchen it is time for a get together with friends. The perfect excuse to host a tea party and bake up a batch of Mary’s Maine Bars.

Yes, cooler weather alone is reason enough bake but when I learned about Cookies For Kids’ Cancer and the partnership between Dorie Greenspan + OXO I had to roll up my sleeves and dust off my apron.

What if the items in the Seasonal Home Box don’t match my style or existing decor?

I understand we all have different tastes and although my goal is to select decor items that will add a seasonal pop to your existing decor rather than completely disrupt your current style, I want you to feel 100% happy with the products and having them in your home. And so that is guaranteed, I am altering my return policy. Going forward once you receive your Seasonal Home Box you will have 3 days to notify me of your return and ship it back at no charge for a refund of the purchase price minus a styling + processing fee of $20.

The returned box must contain all shipped items to receive the refund.

What if I only love a few of the items in the Seasonal Home Box?

You fall in love with four of the say six items in the box and don’t want to send them back but also aren’t in love with the other two? Rather than sending them back – think of this as a bonus gifting service! Spread the seasonal home joy with friends, family and neighbors. Wrap up the yellow pillow case that doesn’t quite fit your home and send it to your sister for her birthday – it’s perfect for her taste. Chocolate Triple Chip Cookies #cookieswap

Christmas Cookie Recipe Swap via @AnAppealingPlan

If you have been on this site before you may have noticed that desserts, and really sweets in general, are not really my thing. Even in my new book, An Appealing Plan, you only find a handful of dessert recipes in the entire book. Ask me for a reccomendation for a savory tart or a cocktail, I’ve got a list of recipes to pull from, but sweets I really have to dig to pull them out.

However, it is the holiday season and that means cookies a plenty – plus I just can’t resist a good old fashion cookie swap, so when I recently saw an article talking about the cookie swap hosted by Julie I figured this I could do. One recipe, one blog post, and it had to be a real cookie recipe – “no balls or bars allowed”.

I was thrilled when my partner in the swap Sandy Hoopes of Everyday Southwest sent a favorite of mine, a chocolate chip cookie recipe! Great minds think alike it turns out because the only cookie recipe I make on a regular basis is a chocolate chip as well and that is what I sent her also!

The recipe needed very little adjustment and as you can see, it turned out a tasty morsel for sure!

Chocolate Overboard Cookies

INGREDIENTS

1 ¼ cups unsalted butter, softened
2 cups granulated sugar
2 large eggs
2 teaspoons pure vanilla extract
3 cups all-purpose flour
¾ cup cocoa powder, Dutch process (w/ alkaline**)
1 teaspoon baking soda
½ teaspoon salt
1 ½ cup white chocolate chips
1 cup semi-sweet chocolate chips
1 cup milk chocolate chips

METHOD

Preheat oven to 350 degrees.

In a large bowl, beat the butter and sugar together until fluffy. Beat the eggs into the mixture one at a time. Stir in the vanilla.

In a separate bowl, combine the flour, cocoa powder, baking soda and salt. Divide the dry ingredients into thirds then, blend into the butter mixture a third at a time, do not over mix. Fold the white, semi-sweet and milk chocolate chips into the mixture.

Drop spoonfuls onto a parchment lined cookie sheet. Bake 8 – 9 minutes.

Makes 24 cookies.

**Dutch process cocoa powder helps leaven the cookies to make them light and airy. I use E.Guittad Cocoa Powder, but King Arthur has a Dutch processed cocoa powder, as well. Hershey’s Cocoa powder is NOT Dutch processed but their “Special Dark” is a mixture of natural and Dutch processed.
