Strawberry Bread { #FLStrawberry + #SundaySupper }

The recipe for this fruit-swirled quick bread calls for fresh Florida Strawberries and is perfect for your holiday entertaining menu or a homemade holiday gift. Try a cream cheese spread as a delicious side for this Strawberry Bread Recipe.

I must admit growing up in the Northeast I, like many living in the northern states, think of strawberries as a summer fruit only seasonally available in the warmer months. But did you know that American grown Florida Strawberries are available November through April. Makes you wonder why you would ever buy a strawberry not grown in the U.S. right? 

So now the question is –  What tasty treats can we make year round to take advantage of this berry abundance? Luckily there is a plethora of sweet and savory strawberry recipes to be found for any winter entertaining opportunity you have to break out those beautiful Florida Strawberries.

I love this twist on a standard Strawberry Bread recipe with switching out the cinnamon for cardamon. It adds a special flavor that is wonderful for the cooler months of the holiday season.

And don’t forget all the amazing health benefits of strawberries! Strawberries and other fruits are virtually fat-free and contain no cholesterol. They are an excellent source of folic acid and a good source of potassium, which helps regulate blood pressure. PLUS strawberry skins contains both gallic and ellagic acids which many researchers believe help treat and even prevent certain forms of cancer. Strawberry Bread Recipe

INGREDIENTS

5 tablespoons plus 1 teaspoon unsalted butter, softened, plus more for pan

1 pint fresh Florida Strawberries, rinsed, hulled, halved and mashed with a fork

1 3/4 cups whole wheat organic all-purpose flour

1 teaspoon baking soda

1/2 teaspoon ground cardamon

1/4 teaspoon baking powder

1/4 teaspoon salt

1 cup sugar

2 large eggs

 

DIRECTIONS

Preheat oven to 350 degrees.

Butter an 8-by-4-inch loaf pan.

In a small saucepan, bring strawberries to a boil over medium heat. Cook, stirring, 1 minute. Set aside to cool.

In a medium bowl, whisk to combine flour, baking soda, cardamon, baking powder, and salt; set aside.

In a mixing bowl, with an electric mixer, cream butter, sugar, and eggs until light and fluffy. Add 1/2 of flour mixture, 1/3 cup water combine well, mix in remaining flour mixture. Fold in reserved strawberries.

Scrape batter into buttered pan, smoothing top. Bake 45 minutes, check for doneness, tent top with foil to prevent browning, cook another 15 minutes. Bread is done when a toothpick inserted in center comes out clean, about 1 hour.

Cool in pan 10 minutes. Run a knife around edges; invert onto a rack to remove from pan. Reinvert; cool completely.

Julia’s Mushroom Quiche – Quiche aux Champignons {#SundaySupper}

Almost exactly 4 years ago today on October 14th, 2012 I started cooking my way through Julia Child’s classic Mastering the Art of French Cooking , I began in my favorite category brunch. Cooking every quiche recipe in the massive cookbook and created my first Mushroom Quiche blog post – which is amazingly to this day one of my top articles on the blog.

I say amazingly because over the last 4 years blogging I have learned an incredible amount about recipe creation, photography, and writing – among many other things but that’s for another day – and my journey from the 2012 Quiche aux Champignons article to current day has been one filled with many trials, questions, friendships and of course lots of quiche.

I have been itching to have the chance to bake a Mushroom Quiche and when my friends in the Sunday Supper Movement Community posted the “sleepover foods” topic for this weeks recipe inspiration I knew it was my time to honor Julia once again, after all what is better to wake up to after a sleep-over than a slice of warm quiche for brunch.

Also in the spirit of a sleep-over, I have kept Julia’s Mushroom Quiche rustic. Crispy bits in the pie plate are a reality when baking a quiche – at least in my world – so I have chosen to keep them in. And you should too. If you are having guests sleep over most likely they are good friends and although I still love to create a seasonal Fall tablescape, I do not like to fuss over a perfect crust. And neither should you.

For the tablescape – set a few white pumpkins down the center of the table, use a rustic Water Hyacinth Charger, pull out the copper flatware, wrap your napkins in grapevine ribbon, cut a slice of quiche and wait for your guests to come down for brunch and recap the night before.

Now that’s what I call a perfect morning! What quiche should I make next?

Quiche aux Champignons
 Recipe {Mushroom Quiche}

Adapted from Julia Child, Mastering the Art of French Cooking

INGREDIENTS:

  • 3 tablespoons unsalted butter
  • 2 tablespoons diced shallots
  • 1 lb large white mushrooms, sliced
  • 1 teaspoon salt
  • 1 teaspoon lemon juice
  • 2 tablespoons port
  • 3 eggs
  • 1 1/2 cups whipping cream
  • 8-inch partially-cooked pastry shell
  • 1/4 cup grated Swiss cheese
  • 1/2 teaspoon pepper
  • pinch of Nutmeg

DIRECTIONS:

1. Preheat oven to 375°F.

2. Melt butter in pan add shallots for a short time then add in the sliced mushrooms, salt and port. Cover pan and cook over moderately low heat for 8 minutes. Uncover. Raise heat and boil for several minutes until liquid is completely evaporated and mushrooms are beginning to saute in their butter.

3. Beat the eggs, cream and pepper in a large mixing bowl to blend.

4. Gradually stir in the mushroom mixture {save 2-3 slices to the side}. Check seasoning. Pour into pastry shell. Spread on the cheese and place 2-3 sliced mushroom slices on the top in the center.

5. Bake in upper third of pre-heated oven for 25 to 30 minutes until puffed and browned.

Note – I have skipped the addition of the additional butter dots on top which Julia’s recipe calls for. I have found the recipe is incredibly rich even with out the extra butter dots – sorry Julia.

How to Make Homemade Mozzarella {#SundaySupper #JuneDairyMonth}

My family has a running joke about how much I love cheese… I see no joke about it! I LOVE CHEESE! And I don’t try to hide it one bit, so when I heard June was National Dairy Month I knew this was my opportunity to finally put my passion into action!

I have several books on how to make cheese at home that to be honest, are currently being used more for decor on my coffee table than in the kitchen for their cheese recipes.  All of that is about to change. I am going to learn how to make homemade mozzarella cheese {with more varieties of cheese to follow}!

Like every great dish, in order to get the best end result you must begin with the best basic ingredients, in the case of homemade cheese, milk is the star of the ingredient list so selecting fresh quality Florida Dairy Farmers milk at the market is a must. Fortunately we have a local farm in town so I headed over and lucky me, 10 day old “Honey” was just beginning to see visitors and I got to love on this special little brown miracle.

The remaining ingredients read more like a science experiment than pantry items. Liquid vegetable rennet, citric acid and non-chlorinated water. Sounds scary to me however, from what I have read making cheese really is more of a scientific formula but not scary at all. I think the scariest part is going to be that I will now have the power to create my favorite food right in my kitchen!

Unlike my usual recipe posts I have included the images within the recipe for how to make mozzarella – my reasoning being this is a slightly more difficult process than most recipes make it seem. Worth it, but more complex than simply following a recipe. There are details that can only be explained using visuals.

So let’s begin…

How to Make Homemade Mozzarella

Makes about 1 pound of mozzarella

Adapted from Artisan Cheese Making at Home by Mary Karlin

What You Need

Ingredients

1 1/4 cup bottled water, non-chlorinated
1 1/2 teaspoon citric acid
1/4 rennet tablet or 1/4 teaspoon liquid vegetable rennet
1 gallon milk, whole or 2%, not ultra-pasteurized, not homogenized
1 teaspoon kosher salt, plus more for brine

Equipment

5 quart or larger non-reactive pot
Measuring cups and spoons
Digital read thermometer
Non-reactive knife, off-set spatula, or similar
Slotted spoon
Rubber spatula
Non-reactive whisk
Cheese cloth
Rubber Gloves

Instructions

1. In a non-reactive stock pot heat milk to 88 degrees over a slow heat over the course of 15-20 minutes. 

2. Measure out 1/4 cup of water in a separate bowl. Stir in the citric acid until dissolved.

3. Measure out 1 cup of water in a separate bowl. Stir in the rennet until dissolved.

4. Pour the milk into the pot. Stir in the citric acid solution. Set the pot over medium-high heat and warm to 90°F, stirring gently.

5. Remove the pot from heat and gently stir in the rennet solution. Stir for 1 minute. Stop stirring, cover the pot, and let it sit for 15 minutes.

6. After 15 minutes, the milk should have set, and it should look and feel like soft silken tofu – although under the whey. If it is still liquidy, re-cover the pot and let it sit for another five minutes. Using your knife, cut the curds into 1 inch cubes and let sit for another 10 minutes.

7. Place the pot back on the stove over medium heat and warm the curds to 105°F over 15 minutes. Stir slowly as the curds warm, but try not to break them up too much. The curds will eventually clump together and separate more completely from the yellow whey.

8. Remove the pan from the heat and continue stirring gently for another 10 minutes.

9. The curds should now feel springy and stretchable, if not leave the curds for 10 minutes then test again.

10. Line a colander with cheese cloth and scoop curds into it with a slotted spoon. Let drain for 15 minutes, reserve the whey.

11. Add 1 1/2 teaspoons of salt to the whey and stir. Slowly heat over 30 minutes to 175 degrees.

12. In the meantime, wrap curds in cheese cloth, place on cutting board, flatten out and allow to dry out for 20 minutes. After 20 minutes, open cloth and cut into 1/2 inch strips.

13. Once the whey is up to temperature, place sliced curds on slotted spoon and dip into mixture to melt curds. Using gloves, begin to knead or pull the curds several times until shinny and stretchable, repeat dipping and melting as needed. Form curds into balls and place into a bowl of ice water to chill.

14. The mozzarella can be used immediately or kept refrigerated for a week. To refrigerate, place the mozzarella in a small container filled with whey brine. Cover and refrigerate.

It seems cheese making is a true science {and art} and minor factors greatly impact the outcome. Be kind to yourself and try, try again if your first batch isn’t worthy of appearing on the cover of  Bon Appetite.

Did you know that for generations, Florida’s more than 130 dairy-farming families have remained true to their values & committed to producing a fresh supply of wholesome, quality milk. These hardworking men & women are caretakers of their cows, stewards of the land, & leaders in their communities. The state’s more than 130 dairy farms are primarily owned and operated by second and third-generation farmers.

And just as interesting, there are about 123,000 dairy cows in Florida, each dairy cow produces about 6-8 gallons of milk each day and is milked 2-3 times per day that collectively produces about 2.34 billion pounds of milk a year. 

Don’t live in Florida? I am sure your state has a just as interesting group of farmers, take this month to research organizations or individual farms in your area.

Chive, Leek + Cheese Quiche {#SundaySupper}

Brunch is my favorite meal to serve when hosting a Spring Gathering and it must feature a menu highlighting the best herbs of my Spring garden. Flowering chives and spring leeks are the perfect combination for a Chive, Leek and Cheese Quiche.

Sure I liked chives, who doesn’t. They added color and flavor to baked potatoes right?

But then it happened…. I fell in love with chives.

At the time, I was working with a caterer in Bucks County, PA and had to stop at one of our local suppliers for micro greens – Blue Moon Acres in Buckingham, PA – on the way to the office. I had passed the farm a zillion times before but never a reason to head to the back to the wholesale area. As I walked back towards the far greenhouse to pick up my crate of micro greens there it was … a garden of chives, really a ring of chives surrounding a smaller garden, all framed by a pea gravel walk way. It was April or May and the chives where in full bloom. There purple globes opening up to the sun. Love at first sight! My inner gardener, inner cook and inner designer all came together there in that very moment. I wanted to stay in that circle forever. I have been in love with Chives ever since.

Once you are in love with an herb you find every way possible to blend it into your recipes. Luckily chives are perfect compliment to most savory dishes and work well in salads and as a garnish on platters if you have extra.

Don’t even get me started on the edible chive flowers. Those little beauties are like purple gold! If you see them, buy them and add them to a spring salad. Your guests will never stop talking about it!

Sesame Chicken + Green Herb Tahini Dipping Sauce {#SundaySupper}

Finger foods are perfect for entertaining, no doubt about it! I love to put an easy spin on classic party food recipes when I am hosting guests. Ingredients like, Black Sesame seeds have a great flavor and add a much needed pop of color to this Sesame Chicken Skewers with Green Herb Tahini dipping sauce recipe.

Sometime in my teens, when I first starting expanding my cooking skills past more than frozen pizza squares, one of my first “real” recipes was Sesame Chicken Fingers. I would proudly cut chicken breast in strips, coated them with a batter mixture of eggs, flour and white sesame seeds then lightly fried them in vegetable oil. Of course being a teen, honey mustard dressing was served as a dipping sauce and they were a big hit with the family {my other recipes included Corned Beef + Cabbage, yes it is true}!

While chicken fingers are still a big hit at parties, these days I like to mix it up a bit when entertaining at home. For instance in this Sesame Chicken with green herb tahini sauce recipe, white sesame seeds have been replaced with black sesame seeds – they have a similar flavor but look just a touch more chic on the platter. And who doesn’t love that.

Honey mustard has also been replaced at this party as the dipping sauce by a fresh herb tahini sauce. It’s complex flavors pair well with the quick and easy chicken skewers and I highly suggest making extra to use on salads, sandwiches and as a dip for fresh carrots. It’s become a favorite in our house already!

Deviled Eggs are a retro side dish recipe that has had more than its 15 minutes of fame in the last few years. Yet I simply still can’t seem to get enough of them! This recipe for Spicy Sriracha Deviled Eggs adds a bit of edge, and crunch, to a vintage recipe perfect for serving at your next Spring gathering.

There is a joke in our house that my husband is going to burn out his tastebuds with tha amount of Sriracha he adds to pretty much every dish, so I have to credit him for the inspiration behind this Spicy Deviled Egg recipe. As the saying goes…if you can bet ’em, join ’em. 

Believe it or not this recipe isn’t super hot so feel free to add an extra teaspoon of Sriracha if you really want to kick it up. I love the heat level and feel that it allows you to actually taste the flavor of the Sriracha as well as the celery, which to me is the perfect balance when working with flavors that could easily over power the other ingredients.

Add this Spicy Srirachi Deviled Egg  dish to your menu as a welcome appetizer served with a Modern Relish Tray, or as a side dish on a buffet along with your other favorite dishes. The bright red dot of sauce and thin sliced celery on top of each one not only adds color and texture but gives a clue as to the ingredients however, if you will have kids at the gathering, you may want to label them so as not to catch anyone off guard.

Each year my husband and I pack up our winter clothes and head out west for our annual ski + snow board trip. The last few years we have be able to meet up with family and friends to spend the week enjoying the cold weather and if we are lucky a snow storm or two.

It has become my tradition on these ski trips to have a day or two by myself to head to the local market, cook up a new recipe, sip some wine and simply enjoy the day in the house while the others are on the slopes. Everyone wins on this day – I am a happy girl cooking and doing my thing and the frozen snowboarders are happy when they come home to a hot meal at the end of the long day.

This year we traveled to Breckenridge, Colorado and rented a condo perfectly situated one block out of town and two blocks from the local market, which by the way I could have spent an entire day in looking at their selection of local, organic and speciality products. Also close by was the larger City Market where I was able to pick up a few additional ingredients for the Root Vegetable Soup and Herb Croutons.

This soup recipe came about based on the best looking root vegetables at the market, a few ingredients that where already in the house from the last renters and one of my favorite winter herbs, Sage. Grated Gruyere cheese adds a touch of richness and saltiness to the croutons and to the soup in general – feel free to top off your bowl with a few extra grated teaspoons for extra flavor.

As hoped, the soup was a huge hit. At the end of the day the gang of chilled skiers opened the door to a house filled with the warm aroma of a pot of soup on the stove and toasty croutons in the oven. The day and meal were a success for everyone.

Krayl’s Homemade Candy Corn Marshmallows {#SundaySupper}

Ask the Mr., majority of the year I am more of a cook than a baker however, once the fall weather hits I feel the urge to head to the kitchen, put on my bakers apron, bring out my Grandmothers retro mixer and try my hand at creating sweet treats. Who can blame me with numerous opportunities to share your sweet creations like Halloween and Christmas just around the corner on the calendar?

Since I was little, I have been unable to resist a bag of candy corn staring at me on the shelf of the local drug store. I intentionally wait until the week before Halloween to buy them knowing that I will eat an entire bag of those sweet colorful triangles in less than two days all by myself if I am not careful – and don’t even get me started on the mini Trick-or-Treat candy bars!

This year I wanted to try something a little different, making my own Halloween treats and DIY Fall themed treat bags to pass out to the neighborhood kids and to send to our little friends in other states. It’s Halloween so let’s go all out – bring on the sweetness and make Homemade Candy Corn Marshmallow Treats.

Remember the days when you headed out in your neighborhood to fill your UNICEF box with pennies and filled your pillow case with various homemade treats from neighbors your parents knew by name? In most communities those days might be long gone however, we currently live in a smaller community and, to my dismay, only get a few kids so I am going to make up a few special bags for the neighborhood kids filled with my Homemade Candy Corn Marshmallows with my name on them so after the night’s frenzy is over they will remember who passed them out and that they are indeed safe it eat without concern. The sugar rush, I cannot be held accountable for – they are on their own for that!

I promise not to eat them all in one sitting, but I don’t think I can promise not to eat them one layer at a time. You know what I mean – first the white layer, then the yellow layer, then finally the orange layer. Don’t tell me you don’t do that. Don’t you taste the difference in flavor or each layer? OK, there may not be a difference in the flavor for the standard version of candy corns but in this version of Homemade Candy Corn Marshmallow Treats you might just taste it. See I have friends whose kids can’t eat any conventional food dye or coloring so I wanted to be sure my homemade Halloween treats were safe for them to eat as well – all the coloring in these treats are from food based colors {I was going to try my hand at making them but then at the last minute I saw some clever company had done it for me}.

I used a small spray bottle to create the color bands and then became obsessed with what else I could make out of these little homemade marshmallow treats! The Tastiest Cilantro Margarita

This Cilantro Margarita has a little twist on it. With super fresh ingredients it is perfect for Cinco de Mayo, a neighborhood BBQ or just a girls night on the back porch. I know you are going to love it.

The main ingredients we are going to use in this cocktail are tequila, lime juice, homemade simple syrup, cilantro, kosher salt, and ice. We’re going to keep it clean and keep our ingredients fresh and to a minimum. First we are going to select our glass and use a little bit of the lime to coat the edge of the glass. If you prefer no salt, but the best way to rim the glass is to use a little bit of the lime to moisten the edge and use kosher salt.

I only like a little bit of salt, so what I prefer to do is dab on a little tiny bit. Next pick off some of the cilantro leaves and place them in the glass. I know cilantro can go either way – you either love it or you hate it, but I happen to love it, so any time I can get fresh cilantro from the farmer’s market, I go ahead and grab it and make as many things as I can. I love it with tacos, guacamole, really anything. Even when we go get sushi I ask them if they have any cilantro – if they have it I just tell them to add it any roll they can!

After you add the lime and cilantro muddle then together. The juice of the lime will help mix that up. Muddle it and then add the lime juice. I always prefer to use fresh squeezed and natural, but if you can’t, the Key Lime very tasty.

A little bit of simple syrup just in to add a little bit of sweetness, then tequila and add in ice. Once you add your ice, stir and top it off with a sliced lime wedge.

I love the bright lime that makes it a little sour, and the cilantro. It’s a lot of cilantro flavor but not too much. Then a little bit of simple syrup makes it a little bit sweet, but honestly, you could do without that. Just depends on how you like your cocktails.

THE CILANTRO MARGARITA RECIPE

INGREDIENTS

lime wedge, to muddle and as garnish
kosher salt
1 ounce lime juice
1/4 cup cilantro leaves
1.5 ounces tequilla
1 ounce simple syrup
ice
lime wedge

METHOD

Moisten the outside edge of the glass with a lime wedge, dip in kosher salt to edge with salt. Place wedge in glass with cilantro leaves and muddle together to break down the cilantro leaves. Add lime juice, simple syrup, tequilla and ice. Stir together to combine.

Garnish with lime wedge and serve very cold.

Makes one cocktail.

Homemade Organic Lavender Honey {#SundaySupper}

Perfect to make and keep on hand to add to hot tea or to add a wonderful natural sweetness to your favorite cocktail, this Lavender Honey is also the perfect gift from the kitchen to bring as a hostess or “welcome to the neighborhood” gift.

Organic Lavender Honey

INGREDIENTS

  • 1/4 cup lavender flowers, organic or culinary
  • 2 cups local organic honey

METHOD

In a small pan, heat honey on low heat until it is thin and slides off a metal spoon easily.

Add lavender flowers to honey and stir to combine. Heat on low for an additional 5 minutes, stirring occasionally.

Remove from heat and allow to cool slightly.

Using a fine strainer or cheese cloth, pour the honey through to remove lavender flowers, into an airtight container to store until ready to use.

USES
Mix Lavender Honey into hot water for a mid morning beverage, in hot tea before bed and let the aroma relax you, add a tablespoon into your favorite cocktail recipe to add a touch of natural sweetness with an herbal essence or spread some over butter onto warm toast.

FOR GIFT GIVING
Fill your favorite glass vessel with the Lavender Honey, add a few flowers on top, seal with an air tight lid – I suggest using Weck Jars due to their high quality and style but any airtight jar with work well.

Be sure vessel is free of any residue by wiping down the outside.

Tie a ribbon around the neck of the jar adding a gift tag with a recipe option on the back. .
